The Subtle Blend Raspberry Barrels


Type: Beer (refermented with fruit)

Description: A blend of foudre-fermented beer refermented  in upright puncheons with fresh, organic raspberries from Viva Farms and mature, barrel-aged beer, naturally conditioned with blackberry honey from The Valley’s Buzz.

Components:

  • 44% Batch #8, brewed 5/30/18: Blonde ale with raw triticale, fermented in an open foudre, with secondary fermentation in a horizontal foudre purchased from American Solera,  and then refermented in upright puncheons with fresh, organic raspeberries from Viva Farms,
  • 27% Blend of Batch #1 (Copeland Dark Base) and Batch #2 (Talisman Base), with extended secondary fermentation in an oak puncheon.
  • 20% Batch #3 blend, brewed 3/27/18: NZ151 Pale with Wheat & Rye), fermented in open stainless steel totes with secondary fermentation in a horizontal foudre purchased from American Solera, along with a portion of Batch #6 (Pilot Pils Blonde Base), and then transferred to 225L barrels for additional aging.
  • 10% Batch #4 blend, brewed 4/19/18: “Session tripel” fermented in open stainless steel totes with secondary fermentation in a horizontal foudre purchased from American Solera, along with a portion of Batch #6 (Pilot Pils Blonde Base), and then transferred to 225L barrels for additional aging.

Grains:  Pilot Pilsner Malt (8, 4. 6), Copeland Dark Malt (1), Talisman Pilsner Malt (2), NZ151 Pale Malt (3) Raw Triticale (8), Raw Wheat (8, 1, 2, 4), Malted Wheat (8, 2, 3, 4, 6), Flaked Rye (3), Vienna Malt (3), Munich Malt (4), Acid Malt (8, 3, 4), Flaked Oats (6).  All purchased from Skagit Valley Malting.

Hops: Pacific Northwest Willamette (8, 2, 3. 4), Mount Hood (8. 3. 4), and Perle (6) from Hopsteiner, PNW Goldings (1, 2) from The Oregon Hophouse.

Other Ingredients: Municipal Water from the Judy Reservoir; Fresh Organic Raspberries from Viva Farms, Blackberry Honey from The Valley’s Buzz (for bottle/keg conditioning); our house culture of native Skagit Valley yeast.
