The Dry Table Strawberry Mead

Type: Mead (refermented with fruit)

Description: Dry, light, modest strength mead fermented in oak with our native yeast and Skagit fireweed honey from The Valley’s Buzz and refermented with fresh organic strawberries from Viva Farms.

Ingredients: Municipal Water from the Judy Reservoir; Skagit Fireweed Honey from The Valley’s Buzz; Fresh Organic Strawberries from Viva Farms, Naturally Cultivated Native Yeast

Process: Honey, water, and yeast were mixed together in an open-top 500L oak puncheon.  Following primary fermentation, a portion of the mead was racked onto fresh, organic strawberries from Viva Farms, causing a secondary fermentation to take place.  Additional honey was then added prior to packaging, resulting in a final fermentation in the keg and a delicate natural effervescence.
