Description: Dry, light, modest strength mead fermented in oak with our native yeast and Skagit fireweed honey from The Valley’s Buzz and refermented with fresh organic strawberries from
Viva Farms.

Viva Farms, Naturally Cultivated Native Yeast
Process: Honey, water, and yeast were mixed together in an open-top 500L oak puncheon. Following primary fermentation, a portion of the mead was racked onto fresh, organic strawberries from
Viva Farms, causing a secondary fermentation to take place. Additional honey was then added prior to packaging, resulting in a final fermentation in the keg and a delicate natural effervescence.
